When I chatted with Carter Williams earlier this week, he shared an interesting point of nuance. “Food is Health” is very different from “Food is Medicine”. The latter is a temporal phenomenon. The former sets the foundation to make the food system, umm, healthy without seeing the doctor. After all, it doesn’t make sense to make food cheap and pay an arm and a leg for healthcare. The global pharmaceutical industry is projected to grow to $1.9 trillion by 2027.
